The Scarsdale diet is a low-calorie, low-carbohydrate eating plan developed by Dr. Herman Tarnower, the author of the book The Complete Scarsdale Medical Diet. An average adult dieter closely following the diet would consume 700 to 1200 calories a day. The diet lasts 14 days and is followed by 14 days off. Grapefruit is an important part of the diet regimen, as it is supposed to contain enzymes that help burn fat. The diet encourages drinking at least 4 glasses of fluids such as water, tea or diet soda a day for proper hydration and flushing waste products from the body. The diet suggests that artificial sweeteners be used in place of sugar. The Scarsdale diet does not call for calorie counting, but allows only breakfast, lunch, and dinner and eliminates all snacks.

For breakfast you always have half a grapefruit and a cup of tea or coffee (you can’t have sugar but you can add artificial sweeteners). For lunch, you can enjoy fruit salad, tuna salad, or assorted low-fat cheese slices—eat as much as you want to—and a cup of tea or coffee. For dinner, you can get broiled lean hamburger, fish, pork, chicken or turkey and vegetables such as tomatoes, cucumbers, celery, and brussels sprouts. Eat till you are full. The salads should be prepared without oil, mayonnaise or other high-calorie dressings. You can use lemon or vinegar. When preparing meat, remove all visible fat. No alcohol is allowed.
The Scarsdale diet is not a lifetime regimen but a short-term approach for rapid weight loss. The Scarsdale diet does not encourage exercise. In fact, it does not provide enough energy for exercise. You should not use the Scarsdale diet or any other low-carb diet if you were diagnosed with kidney or liver disease.
